Beef and Biscuit Bake
Ready for an easy weeknight recipe?
I love an easy meal and even better when I can cook it all in one pan for a quick cleanup too! This beef and biscuit bake hits both requirements. I like to make this using leftovers or stock from my freezer, but you can also make this using raw meat. It uses mostly pantry and freezer staples and comes together in just a few minutes.
What you will need:
Organic flour- I source mine from Azure Standard (visit them to find a drop location near you) but Walmart stocks a white bread flour too. I prefer to use a combo of organic whole wheat pastry flour from Azure along with all purpose flour as well
Various veggies- these can be leftovers like peppers and onions, broccoli, frozen mixed vegetables, or any combo!
Grass-fed ground beef
Chicken or beef stock, homemade, or boxed from the store. Look for ones without MSG, yeast extract, dextrose, and seed oils such as canola
A few pantry baking staples such as salt, baking powder, butter, and milk of choice
Beef and Biscuit Bake
For biscuits:
1 3/4 cup flour of choice (see notes above)
3 tsp baking powder
1/2 tsp Himalayan sea salt
4 Tbsp cold butter
1 cup milk (we use raw)
For beef base:
1.5 lbs ground beef, either precooked or raw
1 small onion, diced
2 tsp salt and garlic powder
1 tsp black pepper
1-2 Tbsp avocado oil or butter
1/4 cup flour
2-3 cups chicken or beef stock
Leftover vegetables and/or a bag of frozen mixed vegetables (we buy the Simply Nature organic brand from Aldi)
1. Add flour, salt and baking powder to a bowl. Using a box grater, grate the cold butter into the flour. Alternatively, you can cut the butter into small chunks and use a fork or pastry cutter to cut into the flour. Mix in milk and stir until all the flour is incorporated.
2. In your cast iron pan over medium heat, saute onions in oil or butter until translucent. Add in precooked or raw ground beef. If precooked, stir for a few minutes to warm up. If using raw, saute until fully cooked. Add in salt, pepper, and garlic powder.
3. Sprinkle flour into beef and stir until incorporated. Add in 2 cups of stock and stir over medium low heat until it begins to thicken. Add in frozen and/or leftover veggies and stir together. Add more stock as needed to achieve desired consistency.
4. Turn off heat and add spoonfuls of the biscuit mixture on top of the meat mixture. Place in a 350 degree oven and bake for about 30 minutes, or until edges are bubbling and biscuits are browned.
5. Remove from oven and let it sit for about 5 minutes. Scoop into bowls and serve.
